Se trata del hinojo silvestre que encontramos de forma espontánea en los prados y caminos de campos sin cultivar. Intenso, fresco y de un verde amargo-oscuro muy acusado. En este caso la destilación se hace de las partes aéreas de la planta, fundamentalmente tallos y hojas. De allí el protagonismo de tonos verdes, frescos e intensos amargos. Vivaz y expansivo, pudiendo llegar a ser incluso invasivo.
